Actually the pipe organ is more associated with The Hunchback of Notre Dame (and later the Phantom of the Opera) who lived in a cathedral. A cathedral is a type of church. Pipe organs were most common in churches, they were used to accompany the choir during hymns and are still used today.
Hence, any association with Dracula is probably due to the fact that churches are holy and Dracula was considered an unholy creature of Satan. Pipe organ music was believed to drive out Satan.
Old Hollywood directors chose pipe organ music because of the Gothic elements associated with it.
It is the pitch and depth that is attractive, however in reguards to vampyres the sound of the organ meant a full church with lots of people to prey upon. The sounds from an organ can be heard from a long distance especially in a cathedral because of the high ceilings.

Many of the old Dracula film used organ music as background music and especially the theme when the count showed up. Very few actually read the novel.
